Marbled Cheesy Cocopandan

Having no activity during holiday doesn't mean spending the time staring in front of TV all day long or doing nothing. Playing in the kitchen might become one interesting thing!



Trying to make a 'quite' healthy cake (contains no yolk) using steam method, very easy to be tried at home. I call it Marbled Cheesy Cocopandan :)

What you need:

7 white eggs
A pinch of salt
1/2 tsp of emulsifier (can be SP/TBM)
120 gr of sugar
140 gr of low-protein flour
25 gr of  cooking oil (olive oil is better)
120 ml of coconut milk (thickness: moderate)
4-5 drops of pandanus essence
90 gr of grated cheddar cheese

Steps:

1. Using your mixer, beat the white eggs with salt, emulsifier, and sugar until smooth (hint: try to take a little bit mixture with spoon. When it doesn't fall from the spoon then it's done already)
2. Add the flour into the mixture, stir.
3. Pour the oil and coconut milk. stir well.
4. Divide the mixture into two with the same size. Add one of them with pandanus essence.
5. Prepare a greased round baking pan (I use the d.20 and h.6 pan).
Pour the pandanus and white mixtures alternately with the position at the center of the pan (this will give the marble texture). Then, pour the grated cheese on the top of the mixture.
6. Steam it for 30' until done.
